The GDWINE project aims to achieve a virtual model of wine “formations”, based on data collected from the winery’s chemical equipment using IoT technology, as well as the sensory and organoleptic data generated during the winemaking process.

Thanks to the coordination and outreach efforts of Cidatum and the participation of partner companies JIG Internet Consulting and Get App, the project aims to optimize production, improve wine quality, establish quality standards, and reduce costs through the digitization and structuring of data related to the winemaking process.

This project has received funding from the Ministry of Industry, Commerce, and Tourism as part of the program to support AEIs, with the aim of helping to improve the competitiveness of Spanish industry.

Benefits

The project has two specific technical objectives. First, the development of digital models for wine production based on analytical and organoleptic data. The goal is to use the data collected through the FOSS equipment and the winemaking equipment available at the winery to develop digital models that represent the wine production process.

The second objective is to conduct comparative trials to refine and improve the digital models, in which wines will be produced using different combinations of controlled variables; these wines will then undergo sensory analysis and evaluation by the winemaker and his team, using the data collection application.
