The goal of the project has been to develop a methodology that enables the generation of new data for the olive-growing and olive oil production industries, starting from early stages, using predictive models supported by artificial intelligence trained on spectral databases.

To this end, a model for predicting yield and quality has been developed, as well as a decision-support tool for determining the optimal harvest date based on the olive tree’s maximum production potential, supported by satellite monitoring tools and the development of transformation models.
